Thinking of throwing an Easter party for your little one this half-term? These crowd-pleasing mini rainbow cheesecakes topped with chocolate eggs are perfect for children and parents alike. They’re so simple to make, you can even rope in the kids to help you too!

Ingredients (makes 12):

  • 400g cream cheese

  • 50g icing sugar

  • 20ml double cream

  • 50g butter

  • 1⁄2 digestive biscuits

  • 3 tsp vanilla extract

  • Food colouring (green/pink/blue)

  • Mini Eggs

Method:

Thoroughly mix together the cream cheese, icing sugar and double cream. Make sure to get lots of air into the mixture.

Split the mixture into three bowls. Add a drop of pink food colouring to one, green food colouring to another, and a drop of blue food colouring to the last.

Melt the butter on a low heat on the hob or in the microwave.

Mash or whizz up the biscuits into tiny pieces, then mix together with the melted butter.

Spoon the biscuits into the bottom of a 12-cup muffin tin, then layer the cream cheese mixture on top in equal thirds colour by colour.

For a finishing touch, top with a couple of Mini Eggs.

Place in the cheesecakes in the fridge and leave to set for at least four hours.

Pop the cheesecakes out and serve!
