Ingredients

200g self-raising flour

3/4 tsp baking powder

1/4 tsp baking soda

115g unsalted butter

200g granulated sugar

3 large egg whites

2 tsp vanilla extract

100g multi-coloured sprinkles

200g salted butter

400g icing sugar

2 tsp pink food colouring

Method

1. Preheat the oven to 180C and prep a cupcake tin with liners. Sift and whisk the dry ingredients together. Cream butter and sugar together until well combined. Whip together at a medium speed.

2. When butter  and sugar are adequately mixed, add in eggs and vanilla. Continue to mix at a medium speed until fully combined. Gently whisk in the sprinkles. Remember to save a handful for decoration.

3. Fill the liners 2/3s full and bake cupcakes for 15 mins until golden brown and a skewer comes out clean. Leave to cool completely on a wire rack.

4. Whilst the cupcakes cool, beat room temperature butter until creamy. Add the sifted icing sugar and food colouring.

5. Pipe on the frosting and top with remaining sprinkles and rainbow decoration.
